Capitol Jill Baking specializes in naturally leavened bread, pastries, and modern cakes made with only the best ingredients, with flavors inspired by the seasons, our eclectic home pantry, and my upbringing in Hanoi, Vietnam. I aspire to create delicious, nutritious, and joyful treats that offer a little respite for you and loved ones amidst your busy lives.

Food has always been my love language. My COVID obsession with long fermented breads became a full-time job a few years ago, and now it's my greatest joy to bake for the neighborhood of Capitol Hill, work with great restaurants and chef friends, curate special events, and help you celebration life's biggest moments.

How to order
Weekly pre-order opens on Sundays at 6pm for next week pick-ups. We're currently doing bread pick up on Wednesdays and pastries/sweet pick up on Sundays. Additional pick-up, special occasion bakes, and popups will be announced in advance in our weekly newsletter and social media channels. Please sign up for my email list or the text list on Hotplate to be the first to hear.
Pick-up is in Capitol Hill, near 14th St and Pennsylvania Ave SE. Exact location and information will be included in your order confirmation.
